De Waarheid over Cholesterol
Vers rauw eigeel bevat meer vitamines en mineralen dan wat voor voedsel dan ook. Net zoals eiwitten en vetten, is ook cholesterol een waardevolle voedingsstof. Dat weet je misschien niet eens, omdat cholesterol jarenlang zwart gemaakt is geworden. Natuurlijk cholesterol is zowel onschuldig als onmisbaar; vitamine D en de sekshormonen worden er van gemaakt, en 10 tot 20% van de hersenen is opgebouwd uit cholesterol.
Het lichaam maakt zelf ook specifieke oxicholesterolen die de groei van lichaamscellen moeten reguleren
[12]. Logischerwijs hebben proeven aangetoond dat deze specifieke oxicholesterolen ook de groei van kankercellen kunnen afremmen of juist stimuleren
[13].
Voedsel dat het meeste oxicholesterol bevat is voedsel dat van nature veel goede cholesterol bevat maar intensief bereid is geworden, zoals alle voedingsproducten die ei bevatten
[20], en dan met name wanneer dat eipoeder is, en producten die kaas, poedermelk of vlees (met name ingewanden) bevatten
[21].
Om de inname van slechte cholesterol (oxicholesterolen) te stoppen hoef je alleen maar geen bereid dierlijk voedsel meer te eten. Wil je de inname van slechte cholesterol alleen maar verminderen, dan moet je de inname van bereid dierlijk voedsel verminderen, en dan met name producten die eipoeder, melkpoeder, kaas of (zoals worsten) ingewanden bevatten.
