Heh, that's completely opposite from my experience. I used to also eat the yolks together with the bag, before I learned about the wai diet. I remember it as a very yucky experience, it was leaving some really bad aftertaste in the mouth and even produced burps with the same bad taste. I actually think this is how I ended up here, I was googling about egg yolks wondering what's up with the crappy taste. The egg yolk content is delicious, compared to that.
so I lose at least 15% of the yolk just by doing this process...
I think you're a bit overestimating here. Admit it you're just lazy to do the process :p

The egg white contains a lot of avidin, but I'm not sure about the sac. I use my yolks as a dip for my fish, so I put them in a Chinese cup, like this one:

Any yolk that's left I clear out with a teaspoon. Works quite well.

So even though you have yolk in a bowl, very little yolk gets wasted?

Look at this website it shows how to seperate egg yolks and whites easily, by pipetting the yolk from the whites with a waterbottle.

Nice trick if you need to save the white or don't like to touch the raw egg (I mean you can just dig in the plate and take the egg yolk, you don't need a fancy bottle just get it..), otherwise I don't think it's simpler than just washing the egg yolk with water.
Not sure if it would work with the eggs I buy, the yolks are usually attached from both sides with the egg white, so this method might easily break the yolk at these attachments.
