Can we eat raw liver ?

Post by Kasper »

I was thinking that eating raw liver could maybe sort of replace egg yolks, if you don't like egg yolk, or if you want some more variation:

.........................................Egg yolk(100g).....Chicken liver(100g)

Energy...................................358.00kcal ..... 119 kcal
Carbohydrate...............................1.78g .........0.73g
Fat.......................................30.87g ............4.83 g
Protein...................................16.76g .......... 16.92 g
Water.....................................48.81ml ...........76.46 ml

Vitamin A, RE (Retinol Equivalent).......584.00mcg .......3296 mcg
Vitamin B1, Thiamin........................0.17mg ........0.305mg
Vitamin B2, Riboflavin.....................0.64mg ........0.5 mg
Vitamin B3, Niacin/Nicotinamide............0.02mg ........9.728mg
Vitamin B5, Pantothenic acid...............3.81mg ........6.23mg
Vitamin B6, Pyridoxine.....................0.39mg ........0.853mg
Vitamin B8, Biotin.........................27.2mcg ...... 187.2mcg
Vitamin B9, Folic acid...................146.00mcg ......165 mcg
Vitamin B12................................3.11mcg .......16.58mcg
Vitamin C, Ascorbic acid...................0.00mg ........17.9 mg
Vitamin D................................148.00IU ........no data
Vitamin E..................................3.16mg ........0.70mg
Vitamin K..................................no data .......no data

Minerals and trace elements
Calcium, Ca..............................137.00mg ........8 mg
Iron, Fe...................................3.53mg ........8.99 mg
Magnesium, Mg..............................9.00mg ........19mg
Phosphorus, P............................488.00mg ........297 mg
Sodium, Na................................43.00mg ........71 mg
Potassium, K..............................94.00mg ........230 mg
Zinc, Zn...................................3.11mg ........2.67 mg
Iodide, I..................................no data .......no data
Selenium, Se..............................45.20mcg .......54.6 mcg

They sort of give the same nutritional value.

Eating 3000 mcg of vitamin A (100 gram raw liver), can be toxic tough according to wikipedia.

I have no idea. Is Retinol Equivalent the same as vitamin A?

I posted wrong data for chicken liver, it should be:
- Vitamin A 11078 IU
- Retinol 3290 mcg

Its nutrient make up is very different.
And yes, its vitamin A contents are extremely high.

Well, I don't think so.
Raw liver contains comparable or (much) more for those nutrients:
Protein, Retinol, beta-carotene, B1, B2, B3, B5, B6, B8, B9, B12, Iron, Potassium, Magnesium, Selenium, Zinc, Sodium

It contains as much vitamin B3 as fish.

Egg yolks contain more fat, vitamin D, vitamin E and calcium

I don't think you can eat it too often because of the vitamin A...
But I think raw liver gives you quiet the same nutrients as egg yolks.

You are contradicting yourself.
If you state that it contains (much) more of a specific nutrient,
that means that regarding this nutrient, the nutrient make up is (very) different.
I don't think you can eat it too often because of the vitamin A...
Thats an opinion that i respect,
but i want to warn other people that too much vitamin A is harmful.

Liver

I was wondering if it is alright to consume raw liver on this diet. I have heard that it is very healthy and people have been doing it for a long time.

Do any of you eat it?

I wouldn't advise consuming raw organs, since it's mostly where the parasites might be, and probably also have more bacteria than muscle meats. I would advise you to slow cook it or dry it at 60ºC if you wanna try it.
Liver has very high levels of animal vitA, which can be toxic, unlike vegetable vitA precursors (betacarotenes). Has also very high levels of vitB12. I don't see why it's that healthy.

If you are going to eat liver, I would recommend freezing it for 2 weeks. This destroys most of the parasites and bacteria. Liver can be very healthy, but has very high amounts of vitamin A. I would certainly not eat it more then 2-3 times a week for this fact. Only 30g of beef liver already contains 100% of the vitamin A RDA. So if you also consume 100g of raw liver + egg yolks (and maybe alot of oranges and tomatoes, because they still don't know exactly if body's can regulate the conversion of betacarotene good enough I believe) it could be very risky as your body cannot degrade vitamin A in the form of Retinol very quickly.

I think there are more tastefull and better sources of animal protein where you can get your vitamins from. If you consume enough fruits for energy and eat some yolks and/or fish daily, vitamins will be the least of your problems. Certainly when you compare it to a SAD diet. And remember we have a very very low intake of mineral- and enzymeblockers or other toxins, so what we ingest can be used more easily and readily.

Unless you only eat apples and a few yolks, that is. It is so sad that the most consumed fruit in the netherlands is the apple, the most vitamindeficient fruit there is. What a shame, people still think that an apple a day keeps the doctor away. And if I tell people I consume oranges, they will tell me: "But they only contain vitamin C, right? Are you getting enough vitamins". LOL
Bananas and oranges, the second and third most popular fruit in the netherlands, are very good vitamin wise though. But I still find people that think that bananas contain very little vitamins. Watermelon is also a very nutrient dense fruit, and everybody responds with: But they contain only water, right? I respond with a simple: "Yes, but all b vitamins and minerals are watersoluble"
Stupid misconceptions.. :/

Jesus, I've been eating some turkey liver lately and just found out now that 100g has 2400% of the RDA for vitamin A, 72400 IU!!! And I've eaten like half a kilo in the past two weeks.. for some reason I thought that chicken/turkey liver has much less vit. A than beef liver.

http://en.wikipedia.org/wiki/Hypervitaminosis_A
The U.S. Institute of Medicine says that the Lowest Observed Adverse Effect Level (LOAEL) for vitamin A, when taken over an extended period of time is 21,600 IU.
I guess I'll stay away from liver in the next months.

How large is the threat for bacterial and parasite contamination in organic raw beef liver? I really enjoy eating this and can't understand why there are so much gross reports available. It tastes absolutely delicious and haven't given me any troubles. If you make sure it comes from a very good organic butcher the contamination thread is okay, right? Certainly because I've been eating raw fish, raw red meat and raw yolks in large amounts for quite a while. Dutch hygiene conditions are normally very good.

I don't dare to buy ordinary liver, though.

How big is the chance parasite infection compared to normal red meat?

I eat a tiny bit (like 20-30 grams) every day, no clue about parasites though. I thought it's same risk as for muscle meat.

Organic vs. non-organic has no connection whatsoever to parasites.

Smaller than for raw pork. Personally, I never had any issues whatsoever with raw beef.
Particularly AH has very rigid checks and controls for the fresh food they sell.
