Can coconut substitute for olive oil?

What oil? Which vinegar? What about sugar?

I've started putting shreadded coconut in my smoothies. I'll typically have 1 banna, 2 apple and/or pears, some mango and coconut.

Since cocunut is high in fat, would this be a ok substitute for the olive oil?

1 banana
1 apple
1 pear
1 tablespoon mango

is 75g carbs (and 1.7g fat)

which would require 37g fat.

Is the coconut dried dessicated coconut?

With fresh coconut, 1 cup shredded = 80g coconut = 27g fat
but it also gives you 11g more carb

so now you have 86.7g carb/28.6 fat.

You need 43g fat.

So add 1 tablespoon of coconut oil, which makes a total of 42.2g fat.

So now the smoothie is:

1 banana
1 apple
1 pear
1 tablespoon mango
1 cup shredded fresh coconut meat (80g)
1 tablespoon coconut oil

Which gives you:

691 cals
4.7g protein
42.2g fat
86.7g carb
3mg Iron
40% RDA Vitamin C

Just before I stopped blending because I thought it wasn't allowed, I had started adding coconut to my smoothies. But in my case it was the pulp from when I juiced coconuts so there would be very little fat in it. (When you put a coconut through a juicer, fatty oily cream comes out of one end, and dry shredded coconut comes out the other.)

Was nice, but very coconutty. I blended banana, eggs, orange, and coconut pulp. (I didn't know blending eggs was bad!)

I use shreadded dry coconut. when I get fresh coconuts I mix the water with the meat and one banana in the blender

I have replaced olive oil with coconut oil in my diet completely. This is due to the facts that 1. I didn't like the taste of olive oil, 2. I love the taste of coconut oil and 3. I've read some very encouraging studies on coconut oil.

But it all comes down to the taste, I guess. Mmmm... coconut oil *drowls like Homer Simpson*

I usually use coconut butter with my morning juice. At the food co-op I belong to, cold pressed coconut butter is rather inexpensive and does taste great with orange (or more exotic) juices.

Papayas are very cheap where I am, and those too taste great with coconut butter and orange juice.

Other nut oils to consider are hazlenut oil and macadamia nut oil, both of which are typically rather expensive. I only use them occasionally for this reason.
