
Iirc on the company's site they say that the nuts are shelled by mechanical means only, so the only downside could be the possible level of aflatoxins.
The process seems like a modified process of an Autoclave.
They also have sent me a flow chart of how they process nuts and 4 pages of information / specifications about their Brazil nuts and all relevant parameters.reveals possible nut food-industry standards of how they process nuts
