From another thread:
Kookaburra wrote:Sometimes after cracking the macadamia nuts, I can see some brown spots (which are the inner layer of the nut shell) on the nut. I find it hard to scrape those little spots off, so I end up just eating the whole thing. My question is, what happens if you ingest those brown spots? Any anti-nutrients/enzyme inhibitors? Are they undigested?
They are indeed relatively hard to digest,
but then again, its soo little...

Sometimes, after chewing the nut, the tiny bits irritate my throat as I swallow. I guess they are sharp. Do you ever encounter that? Will they do any damage to my throat?

Yes, i experienced the same thing.
Its important to thoroughly chew on the nuts,
and mix them with your saliva,
so that no dry bits remain.
I doubt there will be damage, though;
something dry in your throat just feels nasty.

really no refrigeration? I'm always afraid of rancidity in my brazil nuts, especially since some come to the store already spoiled. Brown coloration where the nut should be white is very bad tasting and probably rancid.

Also, there are sometimes two "layers" of brown skin. I recommend always peeling at least the tough outer layer. The inner layer seems much like a hazelnut skin, which isn't too bad.

Refrigeration only helps when the food contains water.
Particularly older nuts get dehydrated.
Refrigeration does not help regarding rancidity.

Would refrigeration, then, be important in a humid climate?
After some reading, I am guessing that dark, sealed storage is most important, with temp up to 25C/77F being just fine.

So the brown hazelnut skin is alright to consume? I find it a pain in the ass to scrap away the skin.

I think it's just fine, Kookaburra. Trying to peel it would be like trying to peel a dried fig--nearly impossible and not worth your time.

Is the brown layer undigested by the body? In other words, is there any harm in eating the brown layer? Kiwi seeds are passed through the colon unchanged. Is it also the case for the brown layer?

Its just not as easy to digest as the nut itself.
Its best to remove them, but if thats not possible, its ok.
