(sun?) dried fruits

So, I understand that dried fruit should be sundried.
Why is that? is it not ok to eat fruits that are just
simply 'dried'?

Fruit also contains protein (and carbs), so heating can originate HCA's. So the lower the temperature used to dry it, the better.

Yes, that much I understand, but 'sundried' sounds
hotter than just 'dried'. I mean, you can fry eggs
in the sun...

Yeah you're right, it isn't that certain what the temperature of the sun would be, but drying stuff in an oven at 200°C is still a different ballpark. Having said that, I'm not sure what temperatures they use, but knowing that time is money (and money is everything) for the food industry, it wouldn't surprise me if they would use high temperatures. :?

You might be right Oscar, but still I think (or maybe hope is the
right word?) that the people who produces organic foods
care more than the ones who makes regular food, and the
dried fruits I got was organic, from a health food store.

Oh I'm sure they care more, but they probably don't know heating is problematic.

Hm, when reading this I wonder if the idea is that it is better not to eat any dried fruit, unless you know it's been dried in the sun or low temp, and no adds and no oils? I mean, almost every date in the store has some glucose to it.. and almost every apticot some sulphite thingy.. is the sulphite a problem? Would you entirely leave it out of the menu. I mean I understand it is not optional, but when is it good enough?
I guess there are different answers to this question whether you're on the sample-wai diet or just the relaxed-wai diet..or?
I mean, I don't right now know if I can find optimal sundried stuff, and also I am not sure if I can afford that kind of brand..

I guess it depends on how 'pure' you want/need to be, and/or how much influence it'll have on your system. Interestingly enough the glucose shouldn't be the problem, as heated carbs aren't that easily toxic.
In the beginning I would just leave it out, and experiment later if you still feel like having dried fruits.

No, but i don t think it might cause acne.
But it does indicate that the fruits have been processed,
probably heat processed, which will have consequences (regarding acne and health).

If you plan on eating a lot of of fruit with sulpfur dioxide on it, plan on possibly having a lot of smelly gas... at least that was my experience when eating a decent amount of dried apricots with sulphur dioxide a while ago.

What does Wai think of sulphites/phosphates and other similar ingredients in dried fruit? Are they used as a preservative, or for the drying process themselves? If they use it to dry them and they are not heated, are they safe to consume? How can one check?

A poster here claims that she called and confirmed that their raisins truly are sun-dried, thus raw.
