Drinking OJ too fast

I often find myself drinking OJ too fast... I usually can drink 16oz (500ml) in under a minute... how bad is this?
I try to take it with a tablespoon (28g) coconut oil...

Yes, coming from a 'normal diet', you are used to taking in relatively large amounts of energy at once.
I used to eat very big meals and drink lots at once.
Sure, regarding your insulin system its much healthier than consume less energy in one sitting,
but if your spare energy (liver-glycogen) is finished,
you will need to replenish your blood-glucose as well as your liver-glycogen,
so then its not bad at all to drink much in one sitting.
If you have been working out for example,
you will find yourself needing much energy at once.

But eventually, on this diet you will increasingly become more sensitive and
automatically more responsive to your blood-sugar system,
which will prevent large intakes of energy, if not energy depleted.
How long are you on this diet already?

few weeks at most... Orange and coconut oil / eggs make up a bulk of my diet i'm still consuming cheat foods alot though need more time to switch over...

I try to drink a Quart or Quart and a half of Orange juice a day... but i find myself drinking 500ml in one sitting, usually when i first wake up or as a mid day snack at my physical job.. and post workout orange juice seems to work great.

That may be when you need it.
If you dont consume much energy before going to bed, you may need quite a lot when waking up.
And if you cant take any energy for an hour or more prior to your mid day snack,
you may need that extra energy too..
Try to ingest energy more often.

It depends on how sweet the oranges are, how much sugar and oil you add, how active you are, and if the juice is sieved or not, but let's say 3 hours or so.
