Hello RRM ~ I LOVE this stuff and drink it like juice with the coconut meat as my fat source. Do you know of any negative effects consuming large quantities per day (instead of fresh squeezed juice)? I believe that it has high levels of minerals, especially magnesium? Would you recommend this as a juice substitute?

Coconut may be VERY high in selenium, and too much is not good, though actual uptake depends on effectiveness of the individual feedback system regarding selenium uptake.
Levels of other minerals are much more moderate (see http://www.3.waisays.com/nutrients.htm )
If you feel perfectly well (physically) drinking that stuff, go ahead. But maybe you might consider taking a blood test regarding selenium, just to make sure.

I deeply appreciate both of your time, dedication & valuable research more than you could ever know. VERY cool that you have kept this site going for so many years. Ok, back on topic.....Coconuts & selenium. Brazil nuts are also high in selenium, yes? Coconuts have even more maybe. I was under the impression that higher doses of selenium are a good thing (serves as an antioxidant). Pardon me, but I am a bit of an extremist. I will try to cut the coconut juice down a bit. Antioxidants are molecules with such properties that they readily interact with certain oxidative radicals (which is good), but also on healthy cells, and the metabolism of various tissues (which may be bad).
