xanthan gum

Post by Mr. PC »

Does anyone know what this is? Here's a link http://www.wisegeek.com/what-is-xanthan-gum.htm

How 'bad' is it? I've been looking for a way to make my own Caesar dressing and this seems to be in all the commercial dressings. Otherwise it's basically lemon juice, egg yolk, vinegar, olive oil, which would be totally Wai!

Once I figure this out I can put it in the recipes forum.

It shouldnt be bad, because its a polysaccharide of different sugars,
and if thats pure, its okay.
But you dont need it, as its just a thickening agent;
it just makes your dressing thicker.

Ah, but I like the thickness. Also for mayonnaise.

Once I figure this out I will start eating ridiculous amounts and become obese!! :D
