coconut banana

Post by manwiththeplan »

Something that I have found tastes good is to mash a banana with a potato masher then mix in melted coconut oil.

This is delicious indeed!
I just mash the banana and the (hard) coconut oil with a fork.
Then there is no risk of 'dirty' protein due to melting the oil

The oil contains no protein, so there is no risk in
melting it. It will happen at very low temperature.

But I also usually just use a fork :)

I can vouch for this combination, a lovely dessert that tastes almost as though it has something alcoholic in it.

My variation is

1 TBSP Extra virgin coconut oil
1 Egg yolk (Preferably organic and free range)
1 Banana (Sliced)
1 TBSP Sultanas

Mix the first two and then add the remainder.

This is a good way to get an egg yolk without noticing that it's there. The sultanas do not hydrate with the egg yolk or oil, so they are still quite chewy and this may not be to everyone's liking.

I should probably warn that eating a high fibre food like banana with an egg yolk, which has lots of protein, may give some people gas.

I often eat this without the raisins, and yes, it's great. :)
The only thing I do differently is that I mash the banana.
