Fruit Salad

Post by Cairidh »

I made this for my mum the other day and she said it was the best fruit salad she'd ever had in her entire life. (She hates raw food, so that was a miracle)

1 banana,chopped
1 apple,chopped
1/2 papaya,chopped
1 nectarine,chopped
1 clementine,segmented
about 12 strawberries,halved
blueberries,halved
coconut cream (1 coconut put through Greenstar Juicer)

Ah, I think it was the coconut cream that did her in! Sounds very delicious.

Quick question, about 'juicing' coconuts: do you use the normal juicing setting, or do you have a blank plate/attachment that you put in? I ask because when I 'juice' a coconut, I get very little 'juice' (several tablespoons) but several cups of dry coconut shreds. It seems kindof a waste if I want just the cream from the flesh, very yummy, but a waste none-the-less. I have an Omega 8005, single-auger jucier.

Maybe you are using young coconut, not mature?

The normal juicing plate. The blank plate makes a dry sort of thing.
1 coconut (mature - I've never seen a young one) makes 6oz cream (don't know how many tablespoons that is) and a bowl of dry pulp.
