anyone ever come across this before in their researching:

"The lectin in wheat mimics insulin, causing your body to go into energy storing mode, whether you have energy or not. This results in fatigue and weight gain"

Wheat germ agglutinin (which is a lectin) indeed has an insulin-like activity.
In lectin (from kidney beans) treated piglets, however, the basal insulin levels are lower. (see this article ) This may be the result of lower insulin secretion due to the presence of lectins (since they evoke similar activities). Maybe that's why wheat-lectin only modestly stimulates glucose transport, which may also be due to lectin inhibiting the effects of insulin. (see this study)

Anyway, you dont want this in your body. Moreover, wheat also contains very powerful opioid peptides, and needs to be cooked before consumption, originating beta-carbolines.
