Here are a few recipies that are my favs:
Of course some of them have munch ingredients, but it's not much dirty protein. You could also add or omit ingredients as you need too for personal preferences.

Gazpacho

4 ripe tomatoes
1/2 cup evo
2oz apple cider vinegar
2 cups tomato juice
2 cucumbers, peeled, seeded and chopped
1 red pepper chopped
1 red onion chopped
1 T. minced garlic
1/2 bunch parsley, chopped
1/2 bunch cilantro chopped
1 T. minced jalapeno seeded (optional)
sliced or diced avocado for garnish

chop the tomatoes, you can peel them if you like. In a medium bowl combine olive oil, vinegar and tomato juice. Mix well. In another bowl mix the rest of the ingredients. Save 1/2 cup of this mixture. Put all ingredients into a blender or processor and puree. Serve with the remaining diced mixture and garnish with avocado.

Fruit salad

2 oranges, peeled and diced
2 mangoes, peeled and diced
1 pineapple, peeled and diced
1 small jicama, peeled and diced
1/4 cup lime juice
1 T. sugar
2 T. chopped fresh cilantro
1 c. fresh chopped coconut or dried shredded coconut

Combine well and eat!

Tuna Ceviche (or Salmon)

12 ounces sushi- grade fish
bunch frish coriander, finely chopped
1 little gem lettuce
2 red bell peppers, seeded and finely diced

Dressing:
2 limes juiced
double the amount of olive oil to lime juice
1 1/2 inch peice fresh ginger, grated
1 tsp. sesame oil
1 T. soy sauce
Chop the fish and mix well with the coriander. Mix the dressing ingredients in bowl and pour over tuna. Wash the lettuce leaves and dry. Spoon the fish into each leaf and sprinkle with red bell pepper.

Ceviche
12 ounces very fresh fish
1/3 cup lime juice
3 T. orange juice
3 T. pineapple juice
2 T. each yellow and red bell pepper
1 1/2 T. minced red onion
1 tsp. minced garlic
2 T. minced cilantro
1 T. olive oil

Dice fish and put in glass dish with lime, orange, pineapple juices, pepper, onions and garlic, tossing well. Refridgerate for 2-3 hours, stirring occasionally.

Add the cilantro, olive oil. Mix together. Serve with lime wedges in martini glasses.

Cocnut Ceviche
10 oz coconut milk
1 T. Chopped ginger
1 T. grated horseradish
12 oz fresh fish
1 tomato, seeded and diced
1 small red onion, julienned

In a pot, bring the coconut mile ginger and horseradish to a boil and reduce by a quarter. Strain and set aside to cool. In bowl, combine all ingredients. Garnish with the red onion and scallion.

Waldorf salad:

2 apples diced
1 celery stick diced
1/2 c. raisins
1 tsp. sugar
1/2 tsp. curry
1/4- 1/2 c. mayo
1/2 cup walnuts diced
2 T. diced red onion
1 T. apple cider vinegar

Mix apples and vinegar. Fold in mayo. Mix rest of ingredients together and refridgerate for one hour to blend flavors. Serve as is or on romaine leaves.
