sweet and sour tomato soup (gazpacho actually)

Post by claireelis »

2 medium tomatoes
1 crisp somewhat sour apple peeled
5 sun dried tomato halves (rinse if salted)
handful of chives
olive oil to taste
optional: 1/2 cm ring of fresh ginger (peeled)

Blend. Unbelievably delicious!

2 tries so far, and none of them completely satisfying yet, but it certainly is promising. :)

First try we used 4 tomatoes, 1 apple, OO, some lemon juice, rinsed the 8 pieces (halves?) sundried (salted) tomatoes. Tasted very good, but super salty! :(

Second try we had only 3 tomatoes left, so we used them, 1 apple, rinsed-soaked all afternoon-rinsed-soaked in olive oil 2 pieces of sundried tomatoes. This time it was edible, but a bit too much apple and not enough tomato for my taste. I guess next time we'll use 4 tomatoes, 1/2 apple, 4 or 5 pieces of sundried tomatoes.

What exactly do you mean by a 'halve'? Is it the same as a piece?

Still tweaking the ingredients, but it's pretty good already. :)

Make sure the salted sundried tomatoes are soaked for at least a few hours.

It's so cool that you're trying my recipe :) Yes, with a half I do mean a piece. I soak the tomatoes in very warm water (not boiling) b/c I think it makes te salt dissolve more quickly and then i rinse them. It's just an idea ;) I probably like mine sweeter than you though. I use an elstar apple - which its crisp sweet/sour.

Ah, warm water might help it go faster yeah. I also use elstar. ;)

I've been experimenting with your recipe as well! :)
So what we've come up with now is the following:
after Oscar's tweaking (4 fresh tomatoes, 4 soaked halves sun-dried and 1/2 apple). I decided to add 1/2 avocado and 1 inch of cucumber more OO and a little bit of water .
The avocado makes it creamier!
Give it a try and see what you think...

Atm tomatoes are not so good in Holland so I think it's best to wait for better results with better tomatoes!
