Carrot Cake with Pear Cream

This recipe, which I changed a little bit, I found in a swedish raw food book.
It's not totally wai (because of carrots, spices and blended nuts), but i think that for people who have no skin problems it's totally fine, and occasionally for acne-prone people. :)

the crust

3 average sized carrots (or 4 small ones)
1 apple
4 big fresh medjool dates (or 6 small ones), peeled and pitted
0.5 dl almonds or macademias (or other handshelled nuts), ground
0.5 dl raisins, hacked
1/2 Table spoon juice and 1 tea spoon finely grated peel from 1 organic lemon
1 tea spoon cinnamon
1 tea spoon cardemon
1 tea spoon real vanilla powder
1/4 tea spoon nutmeg

the pear cream:
2.5 dl macademia nuts
2 Table spoons to 1/2 dl water
1 ripe (!) pear
1 tea spoon real vanilla powder


1. Peel and grate the carrots on the fine side of the grater. Then take a sieve and press the carrots trough that so that the juice comes out. Put the carrots in a bowl.
2. Peel and grate the apple on the course side of the grater. Put the apple in the bowl with all the other ingredients for the cake. Stir everything together and you can also use your hands :)
3. Put the crust mixture in a pie dish and press it out evenly all over the dish.

Now make the pear cream:
4. Put the macademia nuts in the blender and blend to a flour.
5. Add the (peeled and seeded) pear, the vanilla powder and half of the water and blend.
6. Add the rest of the water and blend until it has a creamy consistency. Done!

7. Put the cream evenly over the crust, and decorate with berries, raisins and/or nuts. (or whatever you feel like)
8. The cake tastes great if it sets for a while in the fridge, but is also really tasty right away! :9
The cream from this cake can also be used for many other dishes.
