Mullet Ceviche

This is the best ceviche I have tried so far! :)

For 2 people:

ingredients:
160 g mullet, diced
1/2 avocado, diced
freshly made juice from 1/2-1 pear
1 shallot, minced OR 3 Table spoons minced chives
some minced parsley, maybe 2 table spoons
some extra virgin olive oil

1. Combine the minced shallots with the parsley and some olive oil.
2. Combine the diced mullet and the avocado in another bowl.
3. Pour the pear juice in the shallot/parsley mixture.
4. Pour the mixture over the mullet/avocado and mix well.

Ready to eat! :9

Sounds delicious except for the parsley. But maybe in the mix it tastes well too :)

It's really great! I've made it several times now and:
1. It's better to use a bit less shallots
2. if you don't like parsley, then cilantro also tastes great in it :)
