Is it true that if I do not properly manage my energy levels I will gradually lose muscle mass while adding bodyfat (providing I overeat just slightly each time my energy levels get too low)?

Yes. If your body needs energy while your glycogen depots are empty and your bloodsugar level is low, then it will transform muscle mass into glucose. If you overeat then, after filling up glycogen depots and blood sugar, basically all excess glucose will be transformed into bodyfat.
