avocado contains AGE?

Avocado has 1,577 kU/100g according to the source above!

Not only that,

Oil, olive, extra virgin, first cold pressed (Colavita, Linden, NJ) has 10,040 kU/100g
Salmon, raw has 528 kU/100g

Should I be concerned?

In short:

Some very hazardous (eg carcinogenic), others completely harmless.
The list (you referred to) is based on one (type) of relatively harmless sub-groups.

Just look up what to what extend they are toxic, carcinogenic, and interfering with neurotransmitter metabolism.
Then take a look at some other AGEs, such as PAHs or heterocyclic amines.

Footprints of a thief, does not cause the crime, the thief did, though footprints maybe markers of a thief and correlate with the movements of the thief. :wink:

First of all, a correlation is just that. For example, there is also a correlation between physical exercise and oxidative stress. Does that mean we should exercise only once a month? Of course not.
Secondly, the AGEs that CML and MG correlate with in the ciculation is only the relative harmless group of (non-carcinogenic) endogenously formed AGEs that CML belongs to. The correlation is not with AGEs that belong to the group of exogenous carcinogenic heterocyclic amines, for example.
CML is a marker of endogenously formed AGEs, not of bad AGEs from the diet.

About AGEs; AGEs are everywhere, naturally.
In your body, in any animal's body, in fruits, plants, everywhere.
The question is:
which AGEs are most harmful, and which ones are relatively harmless?
A marker of oxidative stress is not a classification for being a 'bad substance'.
It just means that it is a marker; a 'messenger' if you will.
Please keep in mind that CML in tissues and the circulation is predominantly endogenously formed.
Dont blame the messenger, but find out what is causing the damage.

A marker is just a marker, unless stated differently.
Free glucose and adrenalin are markers of physical stress, and free glucose triggers insulin secretion.
Free glucose also needs to be oxidized for utilisation, yielding oxidative stress to organelles.
And oranges are high in free glucose.
So, oranges might be bad?

Not so fast, i say...
Glucose is also a primary source of energy (particularly for the brain).
A too low brain-glucose level will make you faint, and you will die if that persists.
In stress, glucose is freed up for a fight or flight response.
A marker is just a marker.
