Sorry to bump an old thread but wow! this is news to me. I too thought freezing ANYTHING was a no-no. so can i buy frozen fish now or is that risky in regards to freshness?

also, is it as acceptable to "cure" fish in lemon or lime juice (without salt)? does this damage the protein. (i miss smoked salmon... havent had it in ages and i know the salt is a big no-no.)

Yes that should be fine.

The lemon/lime curing is possible. It'll change the fish as if it were cooked though. Personally I didn't like it that much. Fresh is far tastier I think.

If you yourself are able to establish the freshness of the fish BEFORE it is frozen, it is safe regarding freshness. So, you can buy the fish and then freeze it yourself.
Of course, if your source is trustworthy and you can be sure that the fish was fresh when frozen, its also safe.

Make sure they do not add water when they are freezing, detroys the taste of the sashimi...

With heating it's: the more protein, the more problems. If there would be an issue with freezing, the same would apply. So if freezing fish isn't a problem, then fruit isn't either. :)

so we know that freezing fish kills parasites... my room mate is wondering if it would kill any eggs that the parasites might have laid.

i say yes. what do you guys think?
