Pickled herring / Ceviche
I understand that raw, unsalted fish is best, but exactly how bad is pickled herring or ceviche (with lime or lemon)? I don't have any problems with acne, and I'm just curious about the whole process. What happens with the protein? It becomes denaturated I guess, but how bad can it be?

Today tried pickled herring.
Taste is quite good!
Especially if you consider the price: 12 euro/kg herring for this one:

There is quite some salt in it, so this one is not a good for acne.
If someone knows a saltfree pickled herring (if that exist) let me know.

Here I get fresh salted matjes (not sure if that's herring), it's good but it's very salty. I leave it in water to dissolve the salt but doesn't help much, so I don't buy it often.
Usually I get it in restaurants as a better alternative to cooked fish/meat.

Pickled herring is made by using salted herring, and as virtually all herring is salted I don't think an alternative exists.

Yes, there is deep frozen non-salted herring available for further processing (and for sale at the landing site),
but the taste is not good.
