We've got to calculate the ratios for every nutrient to give us a good comparison:
1.177 : 1 K -----> substantial amount ----> Pork wins
1.174 : 1 Mg
1 : 1.844 Ca
3.636 : 1 Mn
1 : 1.982 Fe ------> substantial amount ----> Beef wins --> it's hard to not get enough iron on wai with yolks and such
1 : 2.730 Co
1 : 1.76 Cu
1 : 2.195 Zn -----> substantial amount ------> Beef rules pork
1 : 1.143 Ni
1 : 1.425 Cr
1 : 1.037 Md
1 : 1.572 Al
1,052 : 1 P
1 : 1.307 I
1 : 2.2 F
1.022 : 1 B
1.666 : 1 Se ---> substantial amount ---> Pork wins big
The rest of these elements are such small amounts, when compared to fruits or yolks these elements are already fulfilled, so that comparing those is nonsense.
1 : 3.333 Vit A ---> Beef owns pork
1 : 1,170 Vit E ---> trace
1.44 : 1 Vit K -----> Pork wins
3,91 : 1 Vit B1 ------> Pork owns beef
1 : 1,130 Vit B2 -----> Beef wins
1 : 1.5 Vit B3 -------> Beef wins
1,166 : 1 Vit B5 ----> Pork wins
3,037 : 1 Vit B6 -----> Pork owns beef
1,667 : 1 Biotin ------> Pork wins
1 : 1.2 Vit B9 --------> Beef wins
1 : 2.451 Vit B12 ------> Beef owns beef
1.247 : 1 LNA
1,12 : 1 Cholesterol
Regarding fruits and yolks, I would say the vitamins pork is high in, rank alot better on the wai diet.
Vit A ---> abundant in yolks, not substantial amount in both, plenty RE in fruits
Vit B1 ----> Pork is extremely good for B1, nothing comes close
Vit B2 ----> Both don't come close to yolks, not substantial enough to choose a good winner
Vit b3 ----> Fish are a good source, but beef is also excellent
Vit B5 ----> yolks own both, not substantial enough to choose a good winner
Vit B6 ----> Pork provides a very good amount of B6, Beef doesn't come close
Vit b12 --> abundant in yolks, but beef is a very good source
Vit B9 ---> Both are excellent sources, beef definetely wins
Vit K --> further research needs to be done here, little dat available (regarding K2 and such)
So in conclusion Beef is better for zinc(!), B12(!), B3 (!), B9
And pork is better for selenium(!), B1(!!!), B6(!)
So, all in all Beef might be, regarding the wai diet, of more importance indeed than pork.

Re: Parmaham
So, pork is certainly not better.
And all pork is excluded.
And all pork is excluded.
Re: Parmaham
RRM posted data some time ago from Souci et al. There's plenty in egg yolks, 170mcg / 100g, i.e. 4-5 egg yolks cover 100% of the RDA for vitamin K.overkees wrote: Vit K --> further research needs to be done here, little dat available (regarding K2 and such)

Also, to cure meat, (natural) nitrite is used as an agent against bacteria, parasites etc.Sullivan GA et al, but also various salts.Armenteros M et al
This induces the formation of nitrosamines and other volatile compounds. (particularly in dry-curingArmenteros M et al Aidjanov MM et al)
If the treatment / processing of the raw pork suffices to nihilated all possible parasites,
it may also suffice to produce nitrosamines and evoke oxidation of cholesterol.
Btw, i hope you are not afraid of yeats, as the surface of Italian typical dry-cured hams
contain various yeasts.Virgili R et al
