STEAMING SALMON

In the U.S. it is now winter and I only can get frozen wild pacific salmon from Alaska. The season for fresh wild pacific salmon (low in mercury) is April to June so I steam it for a few minutes it limits AGEs (advanced gylcation end products) which occurs when you fry bake or cook meat. What do you do if you want to eat fresh sardines? I steam them for several minutes! It is a question of time heat is applied. Wai goes to the extreme since it is impossible to get fruits he recommends in the winter time here. Anyone have advice? Who is Wai anyhow? Lots of citations but nothing on the website about him. :shock:

Steaming = cooking so not healthy because of HCA's.
