i don't keep meat longer than the day i buy it. but i do buy it early in the morning and eat it at night. where should i keep it throughout the day? in a sealed container? soaking in water? right now its just sitting naked in a plastic bag on the counter and do feel a bit icky about that
also, my meat comes from the dirtiest places imaginable; what is the best way to clean it?

like the butcher cuts and weighs the beef with the same table and knife as the pork and never cleans any of it; and has no way of washing his hands after using the bathroom, pretty much no sanitation regulation at all
but on the bright side they sell grass eating cows that grew up in common peoples backyards, no commercialized meat
is it ok to soak this stuff in water all day?

You can safely store it in the fridge for over a day.
If you want to keep it much longer, a dehydrator is very effective.
