Anyway, what do you mean bile acids are released? Do they flow back up the oesophagus? But why do I get heartburn every once in a while and not every time I eat salmon? I eat a constant intake of salmon(80 to 130g). So I do not think its that much fat.Heartburn is usually caused by a defect in the valve connecting the stomach to the oesophagus. The valve should be a one-way door only allowing food down into the stomach, but if it does not close properly then stomach contents can go back up into the oesophagus.
